I see a few turcoman LH figs have a fez like hat on while other intire ranges are more barbaric looking. both essex and legio heroica have the fez. Is this appropriate for the turcoman for the Byzantine period eg khurasanian lists?the medieval lists or really a ww1 thing

You want generic Turkic style heads. eg. some with long hair (emulating much earlier Turks), helmets (not that common for Turcoman), head cloths (real turbans are later), hald shaved heads (turko-mongol tribal styles), caps, the odd Scythian style pointy hat etc...
