Agreed. But at what point do the become "islamic". I mean I know the conversion and all, but... insert 1000 page dissertation here.

Just throwing the "Ghurids" in to the ring. I think it really depends on what kind of game you want to have, but I've had a reasonable amount of success with them, and only played a handful of games. I'm sure I could do better with more experience.

No idea about V2 tho.
