But is it only possible in Panzer Corps to make scenarios challenging by giving the AI opponent superior numerical advantages, i.e. huge amounts of units that outmatch the player's? While that might work in a German campaign, it really felt off in this Soviet campaign...

Since I installed the new DLC, I am encountering the problem that every time I click on one of my air units, the game freezes for a second or so, before it shows the available moves of the unit. And only with air units, ground units are fine.
