I created some challenges in MP, and 5 of the 6 available slots were chosen by human players, so I started the game instead of waiting.
After starting the game, nobody else was in it! I expected 5 human players, but the only person was me.
How could this be happening?

Does the game appears in the My Games tab and the tooltip on the game says "Players: 1" and lists only you? What is the name you gave the challenge?

I am active in the challenges. It appears there is something weird going on with the player counts. In a running game with more than 2 players, the game list will show A / B Players where A is the number of players who have completed their turn and B is the number of players. The tooltip will list the players and who has played their turn. Are you seeing something different?

I shall have to switch to Diplomacy view again, and zoom out. That way, you see an icon indicating the location of human players. I tried it before but perhaps didn't do it properly and see people.
The games i had in mind were:
co-op britain
co-op arabia
co-op grecian

Adding to this, I've noticed a similar glitch where I host a game and right after it starts, it appears everybody has left except me and 1 other person. Everything appears normal once the first turn is done and the game is underway, though.

I'm in the coop grecian game and can confirm that I have been able to complete my turn.
"I'll gladly trade you some ARVN rifles, never been fired and only dropped once"

Yes, I confirm this issue. It is quite unnerving when it happens. You wonder what has happened. You can't see any humans indicated on the map. If you zoom out in Relations view, a gold figurine usually indicates the human players. After the first turn, you see people communicating on the chat and know people are there. You can then see them as human on the Relations view too.
Maybe this is due to the "Fog of War" setting used for the challenges...?

From within a multiplayer game, the quickest way to see who the other players are is probably to open the Ledger and scroll through the Factions, Legacy, or CDR tables. Identification of players shouldn't be affected by fog of war.
