Torpedo confusion

I don't get how torpedoes are used effectively. My destroyer is two hexes away from an enemy ship. If I launch torpedoes, the damage predictor shows 1 damage. If I fire my guns, it predicts 2 damage.

Could some kind soul please shed some light on how to use torpedoes for fun and profit?
