Is it just me? I can' t past the first scenario where you are asked to eliminate 10 minefields, but there appear to be only 9?

there are 10, 5 around the first fortification and 5 around the rear fortifications.

the AT gun is a bit of a challenge to find and destroy (lot of support around it) but can be done.

Yes, as Morge says there are certainly 10 minefields. The AT gun is to the north, so ensure you have scouts/commandos in the area, as their extra viewing range is useful to scout out the fortifications. I played the Beta, where the reinforcements kept coming, whereas the release version has less troops, but if you keep your guys together and keep supporting each other, you should be able to clear the entire map.
