With the release of Legion on the iPad, which is absolutely wonderful, it appears other classics are on their way as well.

I just purchased it and played a few turns of the Unification of Italy campaign, as the Romans. Man, I've missed this game.
I noticed the app icon has CLASSIC across it. Does that mean we're gonna see Sparta et al soon? Hope so!

Since the scenarios in Spartan played in GoT, could we get these games as a single app? Or, at least the option to make in-app purchases of the scenarios?

not sure at the moment. It might be possible but it actually is much better for us to have them available separately in the app store as the visibility on 2 apps is much better than 1. We'll have to have a think about it.
