There is a link on the main menu that takes you to the online help page. This contains the manual text with some changes to reflect the iPad UI.

I just bought and have a few questions on iPad :
1) How do you deselect a unit?
2) Is the tutorial only 2 quick missions (kill a tank and call in airstrike and take out scout unit)?

It's on the main menu ingame.
You can deselect a unit by both double clicking on an empty (i.e. no orders available) tile, or by tapping the unit panel at the bottom of the screen.
The tutorial itself is only the 2 missions, it gets you going with the very basics of control, bonuses, etc. We then keep giving you gameplay details and tips during the first couple of desert missions. They can be considered as on-the-job training

Just tap the icon again to cancel a bombardment.
There is no real info on off map artillery/airstrikes.

I'd sure like a more comprehensive iPad manual....
Can anyone explain how I could undo a move on iPad?
I know what LOS is, but what is LOF? Line of fire?
How do troops get back in the Bren Carriers?

You cannot undo moves. The number of moves where you would not uncover the shroud, show cover, or potentially trigger an ambush would be pretty low, so the functionality didn't make sense.
LOF is indeed Line of Fire. Generally they are the same, although some units can fire beyond their LOS.
To get troops back into their transports, you select the troops, then tap on an adjacent transport and select the Load order.

Hi , what's the difference between Bombard and Suppress (ie. from a Bishop tank).
Or the two attack choices from infantry (can't remember the names though one is Assault). Thx

Bombard allows units to fire on things they cannot see and that are out of LOS. Suppress is the same as for any other unit - it is basically direct fire on a tile which is in cover.
Assault is designed to mimic close combat assault - your men all charge the enemy and engage them up close. They can succeed and destroy the enemy and take their position, or be repulsed with casualties.
