What is the difference between HF,MF,LF and Heavly Armored, Armored, Protected and Unprotected? I've just received the rule book for "Ancient and Medieval". I can see where Armor Class can effect outcomes but where do the rules talk about HF.MF.LF. and how do they effect anything?

In reality:
Ok, your HF is your solid line of guys who would create something like a shield wall. Pike, Spear, Legionaries etc etc.
Medium foot are similar to HF but are in a slightly looser formation and so are less affected by terrain, but are badly affected when fighting heavier guys (HF) or cavalry.
Light foot are skirmishers. Clouds of guys who would prefer not to fight anyone except other light foot.
In Game terms:
HF are affected by terrain. Get disordered easier etc. Look at the terrain chart for movement in the back of the book.
MF are less affected by terrain, but cop a -1 as a cohesion test if they lose against heavies or against mounted in the open (look at the terrain chart, the Cohesion test chart) and also cop a -1 POA when fighting mounted in the open (check the POA chart)
Light foot only do 1 dice per 2 bases (check the counting dice chart) so only get half as many dice and die very quickly. In addition they will generally be out armoured and out weaponed. So, light foot unprotected bow have no POA and only half the dice against Protected Spearmen who have 2 poas and twice the dice. So, the lights will fight only hitting on a 5 or 6 with half the dice, and the spear will hit on a 3, 4, 5 or 6 with double the dice

The designations "Light", "medium" and "heavy" foot are not related to armour weight. Their meanings in the game are:
Heavy foot = close order
Medium foot = loose order
Light foot = open order (or skirmish order) (similarly for "light horse")
They mainly affect movement and terrain effects, but there are a few effects in combat and morale (in the POA, number of dice and Cohesion test tables), as Ravenflight mentioned.
