Formations and a question

Is it possible in FOG to have unit use special formation like the roman turtle, the scottish Schiltron, the chinese turtle stratagemme and so on...

Second, how does the break off work because I have been very disappointing to see a knight protecting my HF rear breakoff and allowing the ennemy to rear charge my previously protected HF (that cost me the victory against the Swiss).
