Im completely new to Fields of Glory and I just wanted to know what would be in a good starter force for Early Persians?

Depends on the number of points available.

If possible:

IC
2 or 3 TC
2 BGs of Immortals
2 BGs of Sparabara (Other Persian etc. foot)
2 BGs of Armoured Greek medizing hoplites
1 BG of 4 hoplites, Egyptian marines or whatever to give rear support to the hoplites
2 BGs of Armoured cavalry
1 BG of LH
1 or 2 BGs of LF
other troops if points permit
