Trying to draw out enemy units with light and other horsearchers.
To shoot must face enemy. Often get caught.
Perhaps a "parthian shot" which can be done facing away from enemy to allow escape but at a larger penalty to damage than the current missile damage could be added as a feature.

Troops evade just as far if facing the enemy at the start of the enemy charge as if facing away from them. The turn at the start of the evade move is free.
If you mean a shot at the chargers as they charge, that would effectively give the horse archers an extra shot, as no other troops get to shoot at enemy chargers, even if they stand and receive the charge at the halt. Such shooting is assumed to have been done in the player's previous turn: Each time a unit shoots it in fact fires two volleys - one for its own side's turn, and one for the enemy turn. However, only one shooting animation is shown, and the casualties from the two volleys are added together before the casualties are displayed.
So, essentially, the horse archers have already had their Parthian shot, with no extra penalty, in their own turn.

I just find my horsearchers caught by knights far too often. Even the light ones

Were there other units (friendly or enemy) in their evasion path that would cause the evading horse archers to have to make extra turns?
What terrain was behind the horse archers? Rough, difficult and forest squares will slow them down.
Or maybe the horse archers are getting a run of bad rolls - you know this already, but it took me while to figure out that there was a 25% chance that evaders and pursuers could either get either +4 AP extra or -4 AP less, and a 50% chance of no change to their AP: Pursuit /Evasion distances

To minimize the odds of being caught while evading, try to shoot from range 2 rather than range 1 and try not to be in the direct path of the knights that charge your shooter on their turn.

And set the knights up for a cataphract flank charge if they are lucky enough to catch the lights
