Modifying maps ?

Would there be a way to add a line/column of empty squares or remove any line/column somewhere on the map (a bit like with spreadsheets) ?

Read the Copy & Paste section in the Editor chapter 24 of the Manual (page 176 in the current released version).

So what you could do is copy the whole area below the line you want to delete, then paste it one tile above where it currently is, therefore covering the line of tiles that you don't want. Then you could reduce the height of the map by one tile, or place different terrain in the bottom row of tiles.
