Convoys, rookie question

Just bought the game, so please excuse the inherent rookie stupidity, but:
How do you escort convoys (which move automatically). Or rather: Where do you place your escorts (and for that matter, your attacking subs)?
Do convoys follow fixed routes?

While convoys don't follow fixed routes, they do follow general routes, and since combat naval units move faster than convoys you "escort" the convoy by moving along with it and if it gets hit, you can easily attack the uboat(s) which attack it.
