I will advise you to try to depict one specific army. I am trying to depict Caesar's army during the Gallic and Civil Wars. We know some things about their soldiers. For example, we know that veterans replaced their montefortino helmets with Gallic iron ones. We also know that soldier were told to keep their shields as, if they lost the ones they received from the Republic, they had to buy the next one by themselves (in fact, the full equipment was just borrowed). In order to make the soldiers to appreciate more their shields, they were told to decorate them, so I have read that veteran soldiers had their shields highly decorated whereas recruit did not have had time to do so. There were also some legions that had specific features. For example, legion Alaude was told to wear plumes of bird feathers as a symbol of the unit.

So I think you may be as much creative as you want. In my opinion (that's what I am going to do) Caesar veteran legions would have more elaborated shield designs and even different colours whereas raw legions would be rather identical. Just my opinion. I present you also one manufacturer who designs centuriones.
