Armagnacs use mercenaries at a point where many of them sacks villages and towns during ten years approximately after the end of French civil war

... namely the Écorcheurs. For them, you can use either the Free Company (Compagnie libre) 1415-1444 or the French 1428-1444. I guess there are ways to reenact a battle of the Albigensian/Cathar Crusade (1209-1229) in FoG2, using e.g. :
- French 1155-1319, Papal 1200-1319...
- vs French 1155-1319, Aragonese 1200-1274
- French 1155-1319, Papal 1200-1319...
- vs French 1155-1319, Aragonese 1200-1274

If "English barons 1214-1216" is also related to a civil war, the First Barons' War (1215–1217), it seems it can be played with armies already in game (England vs England, France, Scotland), even though my ignorance of it makes me not know whether or not an open battle on land ever took place during this war or if there were only sieges and naval battles.
Maybe the second battle of Lincoln (1217) can be played as a scenario in Custom battle (Relieve Besieged Fortress or Enemy Relieve Besieged Fortress) with English 1155-1271 vs English 1155-1271 and French 1155-1319 as ally.
In the FoG2 series, the name of the armies are generic and can be used to play specific armies and wars, including civil wars. For example, "Greek 550-461 (BC)" can be used to play any city-states of the period but Sparta, such as Athens or Corinth. And an English list can be used to play rebel English barons or the King's troops.
Btw modding army lists to historically modify the composition and name of armies is quite an easy and quick task in the FoG2 series. You can see in the Field of Glory II: Medieval - Modding subforum for help.
