Difference between Horse and Cavalry

What's the difference between Horse and Cavalry? Is there a difference?

From my experience it seems Cavalry is similar to Determined Horse, in that when they engage enemies in melee they wont let them fall back unlike, for example, the Kuirassiers which are regular Horse.

Is that correct? The manual doesnt mention any of this.

Units can fall back from cavalry. I don't think there is any difference between cavalry and horse. I think the separation is a legacy from earlier in development and from tabletop, in which cavalry could evade; because that made cavalry OP, evasion for them was dropped.
