Warriors/Medium Foot
Is there any in-game mechanical difference between those two unit types?

Warriors get more movement, but are also more likely to uncontrollably pursue defeated foes.

Hmm, not really. It's mentioned in two spots in the Sengoku Jidai manual, but not at all in the Pike and Shot manual. I do believe it is the same in both games, but I suppose I can't be 100% sure. Honestly these troops rarely appear, so it's not much of a factor. Are there any warrior types in the base game besides Highlanders? I suppose there are some in some mods.

Warriors can move 3 spaces, and can charge cavalry.

Not true. Any non missile infantry can charge cavalry. However, even warriors that have, say, 50% Bow, Swordsmen cannot charge cavalry.

If I get it right, there are :
- unit 'attributes' that can be modded via the squads file or scripts, like adding more men or 50% Swordsmen to a unit, etc.
- unit 'attributes' that can't be modded, that are linked to the type of the unit (and coded in the engine ?), like Dragoons being moderately disordered in difficult terrain or missile infantry unable charge cavalry.
Is it correct ? Or maybe the latter can also be modded ?

All of these parameters are moddable:
Disordering units - FUNCTION TileDisorder(me, x, y) in CombatTools.BSF,
The ability of infantry to attack cavalry - FUNCTION ChargePermitted(me, enemy) in CombatTools.BSF.
