Otto Kittel.
Since he has a -2 defense, should I hope for a defense hero or since he has an iniative +2 should I hope for an attack hero to add to his A+3?

I'd prefer a defense hero. But, since you're a couple of years into the campaign before he appears, you're behind in terms of kills. He'll start with zero, and you will need several hundred kills before you'll have a chance of getting a second hero.
I've liked using him as an escort. His strong attack value can make for a punishing blow to any attacking enemy fighters with no risk of being shot back at. Whatever is left of the attackers can be polished off during your turn. Towards the end of scenarios when you have control of the air, be sure to use him in a ground attack role. With his A+3, he should be able to accumulate a few extra kills. Good luck!

It is unclear why Kittel has -2 defense. Historically, he had no such vulnerability. His -2 defense means that in game he will take more damage from fighters and especially AA. For that reason, it is best to use him defensively. Send other fighters after the fighters and use him on the bombers. Do not sell him off- he's still a lot better than a regular fighter.

Yes, defensively might be an option but you might also take more damage during the total time of deployment compared to building up (and using) more regular fighters from the beginning...

Still doesn't make sense. Kurt Knispel and countless other German heroes also died in combat, but they didn't get defense reductions. Furthermore, the deaths of Kittel and Nowatny were not due to poor defensive play but rather the overall extreme risk of the work they did. Rudel was shot down 30 times but actually has a huge defense bonus. Yeah from a gameplay POV it actually makes it more interesting to play with more of a "glass cannon" type unit. I just feel bad for Kittel to be remembered so poorly. That is not a fair assessment. Most of the German fighter aces of WW2 died in combat, not because they made mistakes or were beaten by individually better opponents but because they were kept flying throughout the war (unlike Allied aces who did a tour and were then posted to train new pilots or go on tours to raise morale). Inevitably they were eventually brought down by sheer weight of numbers.
Check the list of WW2 fighter aces on Wikipedia. You have to go over 150 places down the list to find the first non German ace. Crazy.
I would think the real reason is game balance. Put either of them in a FW190A, overstrength them and watch them rack up the kills. The only thing that slows them down is damage from AA - which is increased due to their reduced defence.
