TBH, I don’t like to game the game too much, and I appreciate the diversity and flavor the captured units offer, that alone is reason enough for me to use them.
I would say that in general, it makes more sense to disband and take the prestige once the scenario is over. For example, at Warsaw you get a Polish 105mm. If you really need a 105mm just disband the Polish unit and purchase a German one for the same price. Because with the German unit you will have all kinds of cheap upgrades down the road.
Same with the tanks. If you capture an Allied tank it generally makes sense to trade it in for a Panzer IV, which is usable and upgradable through the end of the war.
The exception is the ISU-122s. When used as SP guns they are better than anything you have on the German side.

This is the point I was trying to make above though perhaps not clearly enough. If you're eventually going to upgrade that Polish 105 into a family that is available in 1939 such as the German towed or self propelled artillery, then you should sell immediately and get the class that you want using the money. Since that 105 gets used quite alot in that scenario it has some experience, rather than throw away that experience I change it to a wurfrahmen when they are available. Most but not all of the captured units I would disband since they are technological dead ends and if you need to use something like that you should be building up an indigenous upgradeable unit to get heroes rather than wasting the experience however there are a few exceptions like the su-122 or in the west path there is a sherman with a movement hero which when converted to a tiger/king tiger is very useful.
