How much advantage is gained by setting up a line of defence behind a stream?

depends on the troops attacking, a good defense depends on the troops your up against, as some units work really well in poor or harder ground, so against them, the bonus would be a lot less than others imo

It depends on the type of stream (mouse over it to see which type):

Stream - very little defensive value, will cancel lancer POAs and that is about it.
Large Stream - counts as rough terrain - good for defending against cavalry or heavy foot, no defensive value vs medium foot.
Deep Stream - counts as difficult terrain - good for defending against everything (except light foot but they can't charge non-light troops anyway).

Note that to defend the stream you need to be in a square adjacent to the stream square, not in the stream square, and you have to let the enemy attack you from the stream square, not attack them.
