If a group is hit in the flank does only one base turn to face or every base contacted except the ones already fighting frontally.

If bases are already fighting frontally the edge base still turns doesnt it? So at least one base is fighting the flank charger?

What about the rear ranks behind the edge one?

The rule says:
"Bases contacted on a side or rear edge, or a rear corner, by an enemy flank or rear charge are immediately turned 90 or 180 degrees to face the chargers, using the normal rules for turning, provided that they are not already in contact with enemy to their front."

This means that bases contact all turn os nromal. Thus, 2 deep spears would turn and still be 2 deep. (and both sides would only fight with one base)

Only if it's one deep to start with. Basically - if fighting to the front when hit in flank:
if 1 deep that one base would turn
if 2 deep the 2nd base only would turn
if 3 deep the 2nd & 3rd base would turn, but be 1 wide facing the flank
if 4 deep the 2nd to 4th bases would turn, and be 2 wide facing the flank. (the 3 bases being more than 40mm deep)

this is only for infantry - cavalry would be slightly different.
