1st, is there a cap on how many planes can you launch from an airfield/carrier per turn? I can usually launch 1 or 2, but the remaining ones don't offer the option of launching.
2nd, how can I deploy aircraft on a carrier in the beginning of a mision, or aircraft at all? In the Gilberts mission (after Bataan), I can't seem to deploy any aircraft at all, the deployment points are red and it notifies me that there isn't enough supplies there...

You can launch 1 air units pr turn from a carrier or an airstrip (a land unit) and 2 air units from a regular airfield (the AF terrain).
To deploy air units you either need an airstrip/airfield or a carrier.
The carrier(s) can only supply a limited number of air units, this depends on the carrier (fleet/light/escort). When the deploy locations are red, there's not enough supply.
In addition you need a certain number of air command points for deploying core air units (like in a campaign). Usually 3 air command points pr air unit.
There should be tool-tips telling when you've reached the supply or command point limits.
It sounds complicated, but works excellent in the game and these are nice tools for a scenario designer.

So, in the first mission after Bataan, I can deploy my navy South-West from the starting position of the (A)allied navy, but when I select my aircraft, the deployment zone changes to the edge of the map where the allied navy is deployed, and all the deployment sectors are red. I think I have 15 air command points, but there is not enough supply (IN THAT AREA) as my CV is deployed SW!!!
Could you please look into that?

Hi CroCop, air supply isn't restricted by area. Note that you need both command points and supply to deploy aircraft. Do you have enough command points?

Too add on to what Myrddraal said, command point is the number located on top right corner planes is red color column IIRC, to see supply you need to press spacebar. I think you are referring to Marshall island scenario, I believe if the deployment area is red means not enough supply, each carrier provide specific supply hence the carrier might be too small to sustain all the command points avail hence just deploy another carrier, again press spacebar to chk supply provided by carrier. As long as there isn't any airfield (or airstrip) around, you can't deploy any non-carrier-based aircrafts. This is usually the case in the Japan1941 campaign. Too bad there are often no exit-hexes as off-map airfields in the vanilla campaigns what makes land-based planes basically useless.
