Is there a way to switch off domination victory mid game?

Or continue game after victory? This is my trial run. I'm playing on easy, grabbed most of the galaxy, research is at 16% done. Game says I'm about to win. I'd like to stay - try out different technologies, ship designs, buildings, star bases, colonize hazardous planets. Just to get a feel of game mechanics.

So, Is there a way to salvage my game, or do I need to start over?

You can edit the saved game, that's the only way.
