I want play the french army of the 7th crusade, I use the later crusaders list or it'is better if i wait the wolves of the sea and the early medieval french list?

Wolves from the Sea only covers French armies up to 1050 AD. The Feudal French list is in a later volume, and IIRC it doesn't cover the 7th crusade anyway, as it is already covered by the Later Crusader list.

So use the Later Crusader list and leave out any troops not present on the 7th crusade.
