Assuming a list has
4x standard pike/shot (4+2) BGs. All are identical except one BG has regt gun...
Can you detach out the BGs as follows?
1x 8x shot + regt gun
1x 4x pike
1x shot/pike (4+2)
1x shot/pike (4+2)
Detached shot and regt guns...

No, you only detach the shot, the Regimental Gun remains with the main BG, i.e. the Pikemen.

Re: Detached shot and regt guns...
Does the 50/50 restriction on pike and shot being detached out use:
Just the total number of p+s or is it relative to average! superior etc please?
What would I be allowed to detach out from the following example.
8x p+s (4:2) battlegroups. (4x are average and 4x are superior)?
Ideally I would like to detach out the 4x superior battle groups and leave the average ones as 4:2's
Thanks

Yes, it's all the P&S, as long as you detach shot from no more than half you can select all of your superior ones.
