The relevant Osprey books may prove helpful.

Also, if you can get it,

"Armies of the Middle Ages, Volume 1" by Ian Heath, published by Wargames Reesearch Group is very helpful.

For miniatures, the Perry Brothers make the ne plus ultra of French minis. Their Agincourt to Orleans line is inspired:

This line also is nice in that it has a ton of variety: 33 different mounted figures and over different 130 foot figures.

Their crusades line is fantastic too...

Have fun!

A quick, cursory answer:

Pavisiers carried a large shield (pavise) and a spear, and wore some armor.
Voulgiers carried a voulge, a polearm similar to a halberd, and were well-armored.
Bidets were light javelin-armed infantry
Brigans might wear light armor and carried a variety of weapons, and perhaps a small shield.
Pillards and Ribauds were unarmored and carried a variety of weapons.

As others of noted, check the relevant Ospreys for detailed descriptions.
