I think you have covered most of the areas that needs answereing then it is really up to your strategy.
If i go for a overall "close the Med" strategy, i tend to focus more on Naval and Air research. But in addition i always fo Inf research as well no matter what strategy. But perhaps not focus on it until later.
If "defensive strategy", almost always Inf, General with focus industry and perhaps Naval to hold of the Allies and make them fight for the Med.
If you keep the itlaians in the war past 43 then you have usually won the game anyway so the rest doesn´t matter.
