I've been fooling around with the list on the PC version and like some things about it, not sure of the list as a whole though. I'm getting killed by crusaders, I pull a couple of knight units out here and there and wipe them out, but I don't seem to have enough ass behind the army, the crusaders get too much stuff. Should I go with less light horse and knock down the number of generals in order to get more Mamluks or lancers?

No lancer cav. Less lancer LH. More LF to bulk out. Some rocket men to assist with the shooting. Possibly some arty on a hill
Crusaders are a hard task though as the knights are effectively too tough in a historical match up, some of the Mamluks should be allowed to count heavily armoured. Would be more historical

So you're saying load up with Mamluks?
I don't want any foot reall; would rather run around and shoot.
In lieu of Lancers, what if I took the Bedouins as protected cav, dropped a unit of Turcomans and got as many Mamluks as possible? With command per version 2 that would get me:
2 field commanders
2 troop commanders
1 BG of Elite Mamluks
6 BG of Superior Mamluks
2 BG of Turcomans
1 BG of Bedouin Lancers
10 BG in all
P.S. Eventually beat the crusaders by maneuvering and evading until about a third of their army was isolated from the rest. I charged everything in site and annihilated it before the rest could make it over to help.
Did it even better with Ilkhanids, but I just like the ways Mamluks look on the table.

Too many generals. Your army is extremely high quality. You do not want to fight hand to hand so you don't need extra generals to fight. You just need them to move and keep morale up. I would say IC FC or IC 2xTC
I think you should really consider 2 BG of LF. The 4 base BG of naffatun is really useful for adding the -1 on a CT to anyone shot at. A 6 base BG of bow can sit inside terrain, slow second moves, boost BG count and annoy knights with almost impunity. They can shoot 2 dice out to 6 MU again helping your mounted shooting.
I think the bedouin are better as LH, they can drag shock mounted out of position and really threaten enemy light troops. They also get round flanks more easily than cavalry, adding lancers to a flank charge and making the enemy fight in 2 directions.
Like you said manouver is your key
