Can a battery pivot twice in one bound if they have a general attached ?

You mean as a march move? 2nd & 3rd moves must be advances. med & hvy Artillery pivots are not advances. Light artillery could do what it wants & march with a wheel, however.

I thought that was the case, but in the time honoured tradition I let my opponent do it, and then check on here.

Since wheeling is only permitted on a front corner and artillery can pivot on any corner, it could be read that the similarity applies to one corner remaining stationary and measurement being made on any adjacent corner. Or, it could be read that it only allows forward movement like a wheel.

My view is that artillery are different to other formations and would not have the same difficulty coordinating a backwards move. They have negligible depth and dragging a gun backwards should present no more problems than pushing it forwards.
