To blow up bridges might be useful in scenario's where you have to defend/retreat to delay the attacker and for the defender to gain time to set up a defence. But always keep in mind that for the attacker goals must remain achievable in single/mp mode. I don't know in reversed roles, if the AI would be smart enough to do that. Give a unit in a transport to the AI to attack...i'm sure you know what happens 
First of all, why is this thread in the scenario design forum?
As for the question asked, I think, like tank's overrun ability, chances are PzC is a little bit out of scope for this to be implemented.
This is secondary, however. As nikivdd noted, the PzC AI is unfortunately very dumb, it drives towed howitzers right to the frontline, has no clue how to use paratroopers, is unable to switch units from one type to another and - outside the ART/AA/AT trinity around each objective, makes very irresponsible buying choices.
So, until Rudankort makes some of his homework and VASTLY improves the AI in these aspects, implementing yet another "complicated" feature probably shouldn't be put too high on the to-do list.

Infantry Class: Engineer Abilities
There are two kinds of engineers: engineers and bridging engineers. Engineers ignore any rugged
defense that occurs from attacking enemies with high entrenchment values, and can destroy bridges.
When an engineer unit is adjacent to an unoccupied bridge hex, right-clicking on the bridge destroys
the bridge. This counts as an attack. Bridging engineers’ only ability is to act as bridges when in river
hexes. Units that are classified as engineers include: Pionieres and Engineers.

Bridging infantry are used the same in PzC as they are in PG2 - you start them adjacent to a river, move onto it and then other units can cross quickly and easily. If you want leaders from PG2 like Infiltration Tactics and Bridging, both of which made the unit function as bridging infantry, you may not get your wish.

@ drumars, yes, we have diverted from the topic a bit. You're right, though - engineers with the ability to destroy bridges would be good.
