What is a Paired Game?

In the Multiplayer -> Issue a Challenge area you can pick "Paired Game" - what is this? Mirror set of games?

Yes, you play two games ,switching sides for each game.

Excellent for playing scenario games, because soem scenarios are not very balanced. It's a slight shame they don't have this option for Battlefield academy.

Do you play two concurrent games or one at a time?

Yes, this is an excellent format.

Yes, this is an excellent format.
Both games are initiated at the same time. But after that there's nothing to stop you from only playing only one to fruition, before starting the other one. Not that I've ever seen that happen, and I doubt most opponents would like that.
