Is there a way I can change the colours, for example I would like to turn the grass green down a bit.

The words I were looking for were, hue and saturation.

The textures inside the folders in the DATA\TILES folder can be altered without issue.

Assuming you want to alter them globally that is - otherwise you can just create a TILES directory in the root of your own campaign and install tweaked textures in the same folders (I think it will override the main ones).
