Trying to gain altitude

I tried the single Stuka scenario, avoided the Stuka and tried to get altitude. In 24 turns, one plane gained 1,500 feet and lost 75 mph (Screenshots Start and Finish) That seems like a struggle to get altitude

Then I checked the other plane. It was flying at an odd angle but had gained about 4,500 feet and had only lost 30 mph. I had it dive down (still at an odd angle) and attack (also at an odd angle) The attack didn't do a lot of damage
