undeploy hexes

how can i tell what they undeploy?

You can't tell it just from the hex marker - best is to have a named hex like "air exit", which is done in some content, unfortunately not consistently.

There may also be hints in briefings about their use.

Only by experimenting, and then only for your own. There's two kinds, the ones with a box are "Exit" and the ones with a line are "Re-deploy".
I've only played U.S. Pacific and IIRC the only one's available to the player are on the water. What I've done during the deployment phase is place one ship, one airplane and one troop transport next to them and on the first turn I move the units to the exits. In my experience you can exit/redeploy ships and/or airplanes but not ground units (troop transports).

Forgot to make clear that after experimenting I restart the scenario.

In the last mission of the tutorial the exit points are for air only.
IMO this is something that scenario designers should make clear in the briefing.
