That is good to know. Does selecting humiliate as a choice mean that is the only term you can ask for in the proposed treaty?

No, you can add until the chance gets to zero, but that is unlikely to be accepted, if you expect to go on conquering the next 2 turns you can select lower chances if you are forced to make a peace for some reason, backstapping neighbours etc. take a near 100% chance.
