I just noticed that there is a possibility to change those options after every mission - directly on the victory statistics screen! Never noticed that before lol. I guess my problem is solved.

I think there is a huge issue with with that combination and the whole scenario becomes unplayable. If you turned FOW off, all your ships, airplanes and forward airfields become attacked immediately during the first turn and the RAF got roughly 50 air units at its disposal.
