I'm currently playing Egypt and their military is absolutely abysmal at the start of the game and with the huge decadence from your cultural wonders you will struggle to take more than a few provinces in the early turns! Their potential is huge though!

Whatever happens, go and look at Seravy's "Caster of Magic" mod and use that as your baseline for quality.
