I'm at war with the Aquitani and won a provinve. How can I propose a peace treaty? In the dip tab I can only ask for peace without a treaty.

Do you get a Peace... button in the Diplomacy window? That will open the interface that lets you add clauses to the treaty, although the tooltip currently suggests otherwise.

Yes, I get the peace button. Didn't press it because, as you said, the tooltip suggests otherwise.
