Have figured out the BF109, Bf110 as fighters, but the Heinkel and Dornier bombers dont seem to do appreciable damage to anything. Not sure how to use them. Or where to look to interpret their capabilities.

If you mean He-111 and Do-17, strat bombers are set up so they're mostly damaging unit efficiency, while tac bombers do direct (strength) damage.

When you say Sea Lion - are you refering to the BoB mod, or some other modded content? If it is some specific mod I'm not aware of I don't know if strats are changed in any way. For example IIRC in BoB there are also population centers to be destroyed by German bombing raids, but afaik it's intended to be played as RAF.

However, in general coastal guns are units, so strat bombers would reduce their efficiency too.
