So this is my favourite era of the Roman military, so I was wondering if anyone who plays them a lot would be willing to offer any tips they've discovered for doing well as them.

I have been playing late Romans in the KO tournament (379 version). It is a tool kit army. You can have a strong cavalry wing and use infantry to pin the enemy line or you can focus on infantry strength, especially if you have good terrain for the auxila (MI). Your best infantry is the MI which are vulnerable in the open but that is off set by their superior quality. I have also taken the light artillery combined with 2 units of massed archers for some missile firepower. Basically you can tailor your army based on your opponent and the terrain. The downside of course is that you no longer have the best legionaries (Impact/swd).

Practise makes perfect, so play them against different armies to see what you like and what to improve. Take in consideration that the commander of the opposition goes from green (rookie) to grognard ( seasoned veteran). Be flexible is my advise, they ( your late Romans ) are more about combined arms as the Romans that relied on Heavy Foot alone. How cavalry behaves after routing an enemy is a lesson you really need to learn. In the old days the cavalry was just a delaying force, in this army they have a different role. May luck be on side.
