I'm trying to satisfy all victory criteria, but I cant beat this mission...I defeated Poland with little trouble and Norway fell easily (I love paratroops), but I am so stuck while assaulting the low countries...I'm able to take the required 3 victory points to the north but I'm constantly having my units in the forest to the south getting their supply lines cut...I'ts getting horribly frustrating and I'm hoping that someone can offer some tips to help me advance past this mission. There's much to do out on the steppes.

You must engage more units in the south, try to occupy the Ardennes forest systematically.

Analyze the tasks well, concentrate forces in the south, and the rest in the north - limit only to what you have to do.
Skip the center, Dinant can be left alone.

Yes, that works. But I encountered the same difficulties as you did. What helped me a lot was redeploying my airforce to the south after I had sufficiently reduced the northern flank. Be careful when flying your Stukas to the south about that AA. Also, keep some infantry around river crossings in the northern and southern pincer so you dont get cut off by stray Belgian infantry.
If you need more help, just ask.

Most important info for us to help you is your army core composition and how you deploy it.

Stukas are definitely needed in the south because your tanks are simply not good enough to damage the heavy French armor. You should also try to keep your troops together - it is very easy to overextend and it is precisely then that the enemy makes his powerful counterattack. Have to say the Ardennes is one of the more difficult scenarios.

If your troops are grouped, doesn't that make it easier for the Frogs to cut your lines of supply?

Yes, theoretically. But you only have to cover your flanks on certain neuralgic points like river crossings. The French and Belgians only do probing attacks over bridges and over roads. Keep some depleted aux unit or whatever there, let it dig in. Attacks will bounce off. If pressed, divert your Stukas.
Also, after you assault crossed the Meuse river and defeated the Char Bis tank, the French are pretty much done for. Behind Sedan, there isnt much resistance.
Key is IMO shifting your air support from north to south after securing the river crossing and defeating the BEF tank counterattack and making your southern pincer powerful enough, e.g. bringing light arty and AT along.
