1: Do LF have to take a test if charged while defending field
fortifications? I presume yes as I cant find anwhere thay they are anything other than open ground (unlike Portable obstacles)

2: Can field fortifications be defended from both sides? ie if you
are attacking and come up against your opponent's undefended FF and
then he charges you are you classed as defending the FF.

3: If you are close but not touching an opponent's FF and he
charges you with mounted who cannot clear the FF when they contact you
are they disordered in any way? Presume not if its open ground but regardless where do the figures go? Would you simply displace the enemy if possible to make room? Remove or temporarily remove the FF? Balance them on top?

1) They don't have to test:
"A battle-group entirely of light foot or light horse must pass a CMT to receive a charge by enemy non-skirmishers unless it is entirely in uneven, rough or difficult terrain or defending fortifications or a riverbank. If it fails the CMT it must evade."

2) No:
"• FF have a front and rear and these must be clearly identifiable.
• Troops count as defending a FF if they are in contact with its rear edge."

3) No. Fortifications do not count as disordering terrain and:
• Undefended field fortifications do not impede movement of troops. (i.e. not sufficiently to be represented in the rules).
