If you get a pop-up about the convoy having escaped does it mean a single convoy unit escaped or that too many unit escaped to meet the decisive victory condition?

It means that enough have escaped so that a DV is not possible. I think that means 3 or 4 have escaped.

There are two convoys: one starts in the south, one in the far south-east.
For this scenario I split my army into two groups; one pushed North-East through the Soviet lines, while the main thrust was East over the sand dunes. The US forces are well entrenced and it will take all your artillery firepower to make an early breakthrough here. This way I was controlling the northern segment of the road to USSR, thus dramatically increasing my chances of catching the convoys.
