Does unused gold currency carry over from battle to battle

Or should it all be spent before the next mission starts ?

Yes they will carry over from battle to battle.

Oh I forgot to mention the points the resource points will only carry over for the main nation you are playing as.
In for example winter war campaign you will have some scenarios where you will have resource points for Germany as well as Finland.
Since you are playing as Finland for the campaign only the resource points for Finland will carry over.
Feel free to spend all the resource point for Germany since they will not carry over
