1. Normal
2. Limited (dice chess)
3. None (chess)
and why is it your choice ?

Normal as it seems to give it a more real feel of what war is.
Battles never go exactly as planned, and for that I use Normal, but I have considered Limited (dice chess)
Chess I have always seen as kind of sounds boring as it takes out some of the unexpected, unless they get Rugged Defense or they have hidden units.
Just my 2 cents

I used to use normal, but I was getting so cross with extreme results I switched to dice chess.
Now I can't be quite sure what's happening next but don't get so worked up, which is much better for me and for anyone in earshot who disagrees with my colourful language.

dice chess always, normal is just too random, dice chess allows for the unexpected without being ridiculous.

To start with I used Normal, but often got annoyed at the apparently random results, although accepted this can happen in real life. However, in OSL I surrounded a Spitfire with 6 fighters and even with the last 3 attacks when it had no ammo left it still survived to return to base, I switched to Limited (Dice Chess). Real life can be random but you have to draw the line somewhere!

I play with normal. I agree that war doesn't always go as planned, and the normal setting can reflect that to some degree.
My guess is that some players are quick to complain when a ridiculous dice roll doesn't go their way. When a ridiculous dice roll does go their way, they continue merrily on & hardly notice.

I can't deny I enjoyed one-shotting powerful enemy units with some B grade unit, but it was just too variable and extreme good results still didn't work for me, even though I enjoyed the result.

Normal.
Random gives much more fun than predictable chess.
