What is the difference between horse transport and trucks?

Horse transport seems to have better stats than trucks, even if cheaper to buy?

What's up with that?

I think horse transports are slower on certain terrains. The game makes this really difficult to compare as it doesn't give you the relevant information. The only way to safely compare unit stats is to open the unit description files. My general recommendation is: use trucks - they are most cost efficient and are fast on roads.
