Will there be a Steam key for Last Days of Old Earth, for purchases made direct from Matrix / Slitherine? I don't see a "Get Steam Key" option in the Members area for this one, at least not yet. Thanks!

yes, when you buy the game, you get a steam key with it

The key you receive is already a Steam key, so you won't have to redeem a Steam key.
