Field fortifications in the Knights Starter List

Hi everyone,

I like to play romans and Carthaginians but I am wanting to ensnare more of my friends into playing FOG. As a result, I looked at the medieval lists from the main book to show them a "knights" game. When I looked at it, the English have pits / ditches as field fortifications. Nothing wrong with this, but in the POA for shooting, there is a section for in cover / behind field fortifications. How can the army hide behind a ditch? Are you allowed to move your pieces into the fortifications? Does this POA simply get ignored? Help!

When you dig the ditch you make a rampart with the earth that comes out to either stand on top of or hide behind

 Maybe you could model the ditches with some piled up stones, tree stumps, logs and barrels on the defender side? Archers in general liked hiding behind things, and its not unreasonable to imagine longbowmen throwing up similar obstacles behind the ditches and pits.
