Is there a way to chat with someone after the game ends or is that a limitation of game centre ? Would be nice to offer someone a 'good game' or 'well played' once the final round has ended.

Sadly, not at the moment. Once the match is over as far as Game Center is concerned, we can’t attach new data to it.

It would be great if this could be changed in the future...I always like to give a good game comment to whoever beats me.

If it's true that gamecenter won't allow more chat appended, that means you have a different minor bug: if after a game is over you go to "view game" and pause the review, it will allow you to put more chat in the chat box. So if you're saying that the chats I type then never get transmitted to my opponent, then it's a bug that it allows me to put them in.
